Answers: I have this book and I have found it very helpful. You might have to check Amazon.com for it because it is out of print. It is "The Encyclopedia of Herbs, Spices, and Flavorings. A Cooks Compendium" by Elisabeth Lambert Ortiz. The chapter titles are;
