Argentinian Eggplant Spread.?!


Question: I went to an Argentinian Restruant and with the bread they served a spread made from eggplant! It was white and glossy they said it was made with garlic, eggplant salt and pepper. does anyone know a recipe for this?

My freinds from Argentina said it is similar to Baba ganoosh - just without the tehini (sesame paste).

They use argentine eggplants - but any old eggplant will do. They put the eggplant on their gas burner to char the skin very black (this can be done under the broiler or on a barbeque as well) and when the eggplant is cooked through and soft,
Cut/ peel off the blackened skin
or cut in half and scrape the eggplant away from the skin. Then mash the eggplant with 1-2 cloves crushed garlic, 1/4 to 1/2 tsp. salt, some pepper, a drop of hot chili sauce (optional) . Then whip in 4-6 tablespoons of good olive oil to thicken.

It sounds a bit like baba ganoush, but that's definitely not Argentinean.
