i think you're talking about congee. and yes, it is chinese

Do you mean Kimchi? That is a Korean food

Are you talking about KIMCHEE? If so it's a Korean spicey pickled cabbage type of condiment.

If you mean Congee ( also calld Jook ) then it is a rice porridge which is often served with meat, sausages, pickles and eggs and eaten for breakfast.

It's really easy to make, I often have it for dinner.

Congee? I like it.
a cup of rice, 6~8 folds of water, in a pot.
then boil it. When the water is boiling, you can put lobster, shrimp, or any kind of meat, several thousand-year-eggs or whatever you wish , a small pinch of salt. Then boil them for 15 minutes to 20 minutes, turn off the gas burner. You congee is done.
