I came across some recipes, but I don't think I've ever seen it ready-made in the supermarket. I know what you mean though. It has to be that exact same texture we're used to when we get it at a fair. I know it has lots of herbs & spices, and that the ground meat has to be compressed into a sort of roast and roasted, then sliced thin. I know it's not what you're looking for, but here are a few links to some recipes:

And I found this awesome site that show step by step how to make your own gyro cooker. A bit more labor intensive than I'd care to take on. I don't think it's particular healthy, but years ago, I use to LOVE gyros. Heres' that how to make your own gyro roaster site. At the very least, it's entertaining:

(I've been to Greek fairs, and they use lamb. Lamb is commonly used in many Greek dishes, and generally what is used for gyros.)

Tell me when you find out because we are addicts! We have a local Greek House that has the best...but it's not for sale...just the meat. have you ever heard of a Kohl's warehouse (sells foods in bulk)? They sell it but I have never tried it there. Maybe Sams's or Cosco has it? We are Sam's members, but the closest is 2 hours away in St. Louis.

From what I understand it's a blend of goat and lamb so maybe finding local goat/lamb farmers and see if they or a processing co. will process it for you the way gyro shops do and then you can research the spices that go on it....

The real greek gyros is made from pork meat. Here in Germany you can buy special seasoning to marinate the meat in and then stir fry it.Want me to send you a bag?:-)

man i'll be doing that ! , i already have a wood burning heater w/ blower. ck out that site

Local butcher...ask for lamb cut in stips..thats best!

If you watch 'Good Eats' with Alton Brown, he made Gyros for one show. The meat itself was basically a meatloaf made from ground lamb, finely diced onions, and some other herbs that had been finely processed in the food processor. The loaf was then cooked on a rottisserre, or in the oven under the broiler.

You should be able to find the recipe on http://www.foodnetwork.com - check under Good Eats. You can also search their online database for Gyro meat as their recipes are usually very good.
