What are these oriental vegetables used for?!


Question: My mom and I bought these at an oriental store today. At first glance at this picture you might think they are ginger and zucchini. However, they are not. I don't remember their names. How are these cooked? What are they used for?

One is fuzzy squash aka fuzzy melon. We peel the melon, slice it, and eat it in a clear soup made with chicken stock. But you can toss fry it with pork,shrimp etc. and eat it over rice. It's very versatile.

If you say it isn't ginger root, then other vegetable shown might be a taro root. It's starchy -- like a potato. It's supposed to be very nutritious. You can steam it until tender or add it to your stews. I think poi is a Hawaiian dish made from taro.

The brown one looks like a small taro root. You can slice it and use it in soups.
