How long will Caviar stay good? (Masago)?!


Question: I went to my local Japanese market and bought some Masago that was frozen...now defrosted. I was wondering about how long will they stay good in the fridge?

masago is not the same as the processed caviar that you would not want to freeze- I buy it frozen all the time.

I have kept it in the fridge for as long as a week, but no more as it does not last long.

Make more sushi!!!! - here is a masago based sauce recipe you can try to use it up...

Spicy Mayonnaise Sauce for Sushi
1/2 cup mayonnaise
1-2 tablespoon sambal oelek ( ground chilies)
1 tablespoon masago-- Mix all ingredients together.
Refrigerate for at least 2 hours for flavors to meld.

A very short time. I would Not keep it for more than a few days.

Caviar is usually heavily salted and is quite preserved, so may last for a few weeks, however, once open and air gets to it, it loses its flavor.

Just as an FYI, freezing caviar is the worst thing you can do. The caviar you bought will taste horrid.

The reason you don't want to freeze caviar is because it ruins the cell structure of the fish roe. Although some may not know better and think this is the way it should taste.

If you can afford to, try some fresh baluga caviar if you have a chance.

If you are looking for a non-frozen alternative, you can get some lumpfish caviar in jars at most finer supermarkets. This is slightly saltier but will last longer in the fridge.

Lowe's foods has it in jars. It is not the "good stuff", but who can afford that?
