A grand curry buffet is great for entertaining or big family get-togethers. Make a big batch of beef, chicken, chrimp or lamb curry. Serve in a big bowl at the center of the table with a huge bowl of cooked plain rice. Surround these with medium bowls of condiments: rainins, chopped onions, chopped fresh tomatoes, toasted dessicated coconut, fresh grated coconut, whole almonds or walnuts, any kind of chutney, chopped hard boiled egg white, grated hardboiled egg yolk, boiled diced potatoes, boiled carrots, buttered cauliflower.

The fun is when guests pile a mound of rice on their plates, cover the rice with curry, then prinkle on top their chosen combination of condiments.

I had beef curry served this way in the 60s at the original Swiss Inn restaurant across the street from the US embassy in Manila. In the 70s, the basement restaurant of the Excelsior Hotel in Hong Kong had Sunday Curry buffets that were similar.
