I've been eating sushi for 30 years, and I'm still here. Always make sure you get it from a reputable restaurant. If you're buying from a fish market, be sure to get sushi grade fish. Keep it cool, don't let it sit out, and eat it fairly soon. In short, follow general food safety rules. Enjoy. I love sushi. (Now I'm hungry for it.)

sushi chefs may correct me here but most fish that are served raw are atleast flash-frozen to kill off potential parasites

I suggest you be careful, since lately sushi has become such a hip dish, everyone wants a piece of the profit some aren't careful enough in watching their hygiene. I just recommend you to be careful in choosing where you buy your sushi and if your expecting, its best just to stay away altogether... ITADAKIMASU...

I sometimes make sushi with cucumber, or celery as the filling

When I make at home I use smoked salmon for the fish..

I think if it's really fresh its fine.
