Coconut Milk in a can?!


Question: This weekend I tried a recipe for Thai panang curry (which came out nicely overall!). The recipe includes a can of coconut milk. This was the first time I'd ever used coconut milk, and to my suprise when I opened the can there was a think, white, dry paste at the top, with a clear liquid on the bottom. So I poured it all into a bowl and stirred it together, providing the consistency that I expected.

Is this normal? Is this how coconut milk from a can is usually kept? Or is it possible that my can of coconut milk was less than fresh?

It's the separation of coconut cream and coconut milk/water.
You need to shake the can well before opening. Otherwise this is normal. My fav coconut milk brands are fromThailand, Chaokoh or Thai Kitchen are the best quality.

yes, it is normal,and for me it is safe and freshly sealed,,of course it has thick white paste on top of it, because the white paste is the oil,,

BullshIt ! That white paste is not coconut oil. Majority of coconut milk in US are from Thailand and they are mixed with lots of starch and milk powder. Therefore you could find layer of white paste on surface. Choose the ones from Malaysia. They are better and authentic. I keep in for more than 4 months and it doesnt clump.

I think you should shake it before opening it..

Coconut milk, or coconut cream, are exported from Asia in two forms: powdered and canned. The canned stuff has to be shaken well to reconstitute as coconut cream. Even when you squeeze freshly grated coconut at home, the thick cream floats to the top within minutes. Don't woryy. But next time, shake the can well before opening.
