Is there a turkey substitute for cherizo sausage?!


Question: I work at a catering company and we make our own chorizo out of ground turkey - I'm not sure if you can find premade turkey chorizo in the store but you can make it on your own - It is really simple...

Also, Whole Foods has a standard recipe and spices for making chorizo sausage and may make some up for you upon request if you don't see it displayed.

I am a froemr chef and chorizo is a raw unsmoked sausage, I would use a fresh turkey italian or a turkey keilbasa. I use this when I used make Jambalaya or Gumbo in place of andouille.

But for Paella it would be better to use the fresh sausage, the fat, what little there is will be an added flavour to the dish, even if you can find chicken ones, if you have an Arabic or Turkish market in town the have beef and lamb sausages that are nice too.
