Anyone have any recipes for awesome mexican 7-layer cheese dip?!
Answers: i went to a party recently and i had some there for the first time and i loved it. do you have a really good recipe i can borrow?
hey buddy, here's a recipe that doesn't use beef or hamburger because most do
2-3 spring onions, minced or finely chopped
? red pepper, minced or finely chopped
2 jalapeno peppers, minced or finely chopped
2 tsp ground cumin
1 tsp ground coriander
400 grams whole peeled tomatoes in juice, chopped
125 grams Cream Cheese
? cup Cream
2 cups Grated Tasty Cheddar
1 ? tblsp cornflour
1) Heat a dash of oil in a saucepan and cook the spring onions, peppers, cumin and coriander for 2-3 minutes until quite fragrant. Add the tomatoes to the saucepan and mash them down with a wooden spoon.
2) Add the cream cheese and stir until melted. Add the cream, grated cheese and cornflour. Allow to cook over a very low heat, stirring all the time, until thickened and hot. Season with pepper.
3) Serve in large bowls with corn chips, crudités or other dippers.
or
1-1/2 pounds Velveeta cheese, cut into 2-inch pieces
1/2 stick unsalted butter
2 heaping tablespoons flour
3/4 cup milk
1 can Original Ro-tel tomatoes and green chilies (can use mild or hotter)
1 teaspoon ground cumin
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
Of course you can make it hotter with more black pepper or red pepper
1) In large bowl, melt butter in microwave, watch it or it will blow.
2) When melted, remove and add flour, stirring
3) Add milk, stir, then add can of Ro-tel, stir
4) Add ground cumin, black pepper, and garlic powder, stir
5) Return to microwave again for about 1 minute, or more
6) Remove, stir, and add cheese
7) Return to microwave and cook, watching closely, and removing frequently to stir
8) Continue until cheese is melted
9) Remove from microwave when it thickens
10) Stir again
NOTE: Cheese dip is ready for "dipping" when it is creamy and smooth
Ingredients
2 Large Can Refried Beans
2 Cans Jalapenos -- or chilies
2 Tomatoes -- or more
1 Onion -- (optional)
16 Ounces Sour Cream
2 To 4 Avocados
2 Packages Taco Seasoning
Shredded Cheese -- (Mozzarella and cheddar)
1 To 2 Cans Olives
Hamburger (if ya want)
Salsa (if yawant)
Directions
Put a layer of fried ground beef and mix it with: Mix the refried beans and taco seasoning together (I also mix the chilies in with this, but some people put the chilies as a layer) Mix this really well (I used a food processor, but today I am going to use my mixer).
This is the first layer.
Put a layer of sour cream on top of the refried beans, taco seasoning and chilies.
Next put a layer of well mixed/mushed avocados (you need enough to cover the pan, I use a cake pan normally) on top of everything else Next sprinkle cheeses on top (I just thought about it and I put the avocado first and then the sour cream, but I suppose it doesnt matter).
I think the more cheese the better myself *grin*! Next cut up tomatoes and add as many as you like, which I like to use at least 2 cut up tomatoes.
Last put chopped up olives.
Put in the oven until the cheese is melted.
I use a low heat so that everything else warms up.
Last but not least pull out the chips and dip! Everyone really enjoys this dip.

I make mine like this:
bottom of pan: 1 can refried beans spread evenly.
top with:
ground beef cooked with taco seasoning
guacamole
Salsa ( I like Pace Picante)
chopped tomatoes
sliced black olives
sour cream
cheddar cheese and jack cheese finely grated.
You can add sliced green onions, if desired.
Yummy!
the other six laters are easy, the big one is the meat!
1 pound very lean ground beef
8 oz beef chorizo
2-3 Tablespoons good chili powder
1 Tablespoon of cumin
1 minced medium onion
3 cloves minced garlic
2-3 oz tequila
put the beef and chorizo in a large dutch oven or heavy bottomed pan and brown on high heat, don't pour out the fat, when it is almost done add te onion and stir constantly
when the onions are soft add the chili powder cumin and garlic. stir constantly until it starts to get alitte toasty in the pan and the trn off the heat and carefully add the tequila.
salt and pepper it to taste and layer on the reat of your stuff
