Well you have to go back further than Louisiana...when the French and African settlers came here they bought many of the foods from their homelands with them...then when they arrived or as with the Acadians (Cajuns)...when they were abandoned here...they had to make do with what they had and what this area had to offer...at the time it was food no one else would eat...shrimp..lobster..and crawfish were thought of as disgusting by the Americans..but with mixtures of spices and vegetables from their homelands they made special delicious dishes...gumbo..which in African languages meant Okra...Jambalaya basically means ham..all mixed up...lol....and as far as soul food goes...all the love and family and heart put into cooking for their family and friends is what mades it "soul food"...big iron kettles of Gumbo...jambalaya...etoufee......sauce piquante...cooking in the front yard....made to share with anyone close enough to smell it...wish i was back there now....Go to Louisiana...Char...you'll pass a good time!!!!(Go to Louisiana my cherie...you'll have a blast!!)
