Im sorry I do not know. All I know is how much they use Hot Chilli Sauce in their foods. Its red, and you can get it at any health food, or whole foods store.

It's an asian chili oil

10 – 12 small dried chilies , the small red hot chillies you can buy in asian markets (1 – 2 inches long) make 2 tablespoons coarsely chopped chili flakes (you can make it in a blender or a food processor or crush them with a rock or something similar.
1/2 cup peanut, canola, or olive oil.
1 tablespoon sesame oil, optional

Mix all ingredients

There are a few kinds... as below that you may find in any Asian supermarket or grocery stores.

chili oil (only oil in red colour)
Gulin Chili sauce (kind of oily too)
Chiu Chow Chili oil (chili oil fried chopped chili seeds)

Sometimes whole dried arbol chiles are used in foods like Kung Pao dishes, or Mongolian Fire Oil...sooo good!

Dude, I went to China a few years ago. Just be very glad you're eating American chinese food, and don't worry about the seasonings. Over there everything tastes like the same nasty oil. The rice they wrap everything in is hard and nasty. When you get your food, you should feel lucky if it has no webbed feet or beaks in it - not to mention border collie meat. 1. Chilli sauce ( red / hot )
2. Chilli paste with onions ( fried chilli and onion + garlic )
3. red Chilli powder / flakes
4. sliced green chillies.
5. White pepper.

They also use chili oil, vietnamese style chili paste with garlic.
