Yes put the chorizo in a pan along with about 3 eggs, or more if you want, salt it and pepper it if you want!!
(Optional: potatoes!!)
cook it and then eat with tortillas!! yum!!!

here's the best recipe for chorizo:
1/2-1 teaspoon coriander seeds, crushed
1/2-1 teaspoon cumin seeds, crushed
1-2 dried ancho chilles
1 package (12 oz) prebrowned vegtable protein crumbled
2 eggs
2 Tablespoons cider vinegar
2 cloves garlic, minced
1 table spoons paprika
1-11/2 teapoons dried oregano leave
1/2 teaspoon salt
Vegtable cooking spray
1 cup (1/2 recipe Red tomato salsa
6 tablesppons sour cream (can use fat free)

1) Heat seeds in small skillet over medium heat until toasted, stirring frequently. Remove from skillet. Add chilli to skillet, cook over medum heat until softened, turning freq so chilli doesnt burn, 1 to 2 min. Remove and discard stem, viens and seeds, chop chilli finely.
2)Combine veg protein crumbles, seeds, chilli, eggs, vinegar, garlic, paprika, oregano, and salt. Form mix into 6 patties.
3) Spray large skillet with cooking spray, heat over med. heat until hot. Cook patties over med to med-low heat until browned 3-4 min on each side. serve patties with red tomatoe salsa and sour cream.

Slice them diagonally, stiry-fry with lots of sliced onions, green and red peppers.

Slice thinly, simmer with canned pork and beans.

Ingredients (serves 4)

2 tablespoons olive oil
6 chorizo sausages, sliced
2 brown onions, halved, thinly sliced
2 garlic cloves, crushed
1 red chilli, deseeded, sliced
2 teaspoons paprika
1 tablespoon ground cumin
2 cups basmati rice
4 cups Maggi Real Chicken Stock
1/2 cup flat-leaf parsley leaves, chopped

Method

Heat 1 tablespoon of oil in a large saucepan over medium heat. Cook chorizo for 2 to 3 minutes each side or until golden. Drain on paper towels.
Heat remaining tablespoon of oil in saucepan over medium heat. Add onions. Cook, stirring, for 2 minutes. Add garlic, chilli, paprika and cumin. Cook for a further 2 minutes, stirring, or until soft.
Stir in rice. Add stock and chorizo. Bring to the boil. Reduce heat to medium-low. Cover. Simmer for 10 minutes. Remove from heat. Stand, covered, for 5 minutes. Stir through parsley, and salt and pepper. Serve.

INGREDIENTS
250g Semi Cured Chorizo Sausages
Olive Oil
Balsamic Vinegar
? Ciabatta Bread (Fully Baked)
2 heads Little Gem Lettuces
1 punnet Cherry Vine Tomato (Halved)
1 Large Bag Rocket
60g Grated Parmesan


Method
Peel the skin from the chorizo and tear it into bite-size pieces.
Heat a little olive oil in a pan and fry the chorizo for 8 minutes until slightly coloured. Remove the chorizo from the pan.
Pour the chorizo oil from the pan into a jug and add the balsamic vinegar.
Remove the crusts from the ciabatta and tear it into similar size pieces to the chorizo.
Return the frying pan to the heat and add a little olive oil. When hot, add the ciabatta and fry until crispy and golden brown.
Mix the sausage, lettuce, tomatoes, rocket and parmesan together and pour the chorizo dressing over.
Sprinkle the croutons on top and serve.

Chorizo Scrambled Eggs

You almost wont't believe the flavor that chorizo brings to these eggs for breakfast or anytime.

Ingredients
6oz Spanish chorizo (spicy cured pork sausage) or 6oz Mexican chorizo (spicy raw pork sausage)*
2 Tbs. vegetable oil if using Spanish chorizo
10 large eggs
Garnish: chopped fresh cilantro leaves
Accompaniment: warm corn tortillas

Directions
If using Spanish chorizo, finely chop, then cook in oil in a 12-inch nonstick skillet over moderate heat, stirring, until browned, 4 to 5 minutes. If using Mexican chorizo, remove from casings and cook (without oil) in skillet, stirring and breaking up meat, until bubbling and completely separated, 4 to 5 minutes. Whisk eggs together in a bowl and stir into chorizo. Cook, stirring, until eggs are scrambled and just set, about 5 minutes. Serve immediately.





Chicken, Chorizo and Bean Bake

Ingredients
4 pieces chicken
1 can white beans, drained
1/2 a lemon, sliced
1 chorizo sausage, sliced
4 cloves garlic, smashed
1 C. chicken stock
1/2 teaspoon pimentón de la vera (Spanish paprika)
Olive oil
Sea salt and freshly cracked black pepper

Directions

Place drained beans in baking dish and pour chicken stock over them. Add chicken. Cover with lemons, chorizo and garlic. Drizzle olive oil over the entire thing. Sprinkle with paprika, salt and pepper to taste.

Cook in 400 degree F oven for 45 minutes or until chicken is done.



These are 2 of my fav recipes with chorizo. Many times I add it to my refried beans.
