It is made by boiling a skinned, cleaned hog's head then letting it cool in a loaf mold. Sliced and on a coulpe slices of bread is actually tasty..
Edit: I did not say it is cheese, but that is what it is called. Similar to Souse. Used to see it in the deli at the grocery store all the time. Not anymore.
Also, before some wise guy says it won't fit I did not mean the head is put in the loaf pan. The bones are removed from the liquid and the meat and liquid are. The gelatin will firm up and make a loaf.

It's not a cheese at all...what self-respecting hog would have cheese in its head...unlike a few people I have to survive around...
