Question: What are some main dishes of southern Spain? I don't need recipes just some main courses.

There are many dishes, and actually Paella is typical of the Valencia area on the eastern coast of Spain not in the south.
In Andalucía among other things one of the specialties is fish, cooked many different ways
Pesca'ito Frito... deep fried fish (of many types),
Fritura Malague?a--- A fried fish platter with calamari, anchovies, sardines, and at least 3 other varieties of fish..
Cazuela de Fideos... fish stewed with noodles, and vegetables.
Almejas a la Marinera... shellfish sautéed in a little bit of white wine with garlic and parsley.
Boquerones en vinagre...fresh anchovies marinated in vinegar.
Potaje...stewed vegetables with chorizo sausage, chicken, and usually a piece of either beef or pork. This usually has a a base of lentils, chickpeas or beans. (typical winter fare).
Pinchitos Morunos... small chunks of meat (usually pork) with moorish spices, placed on a skewer and grilled
Gazpacho in the summer time (cold tomato soup)
Tortilla Espa?ola... Spanish potato omelette (I would say this is almost the national dish par excellence)
For Dessert:
Arroz con leche (rice pudding with cinnamon)
Natillas (creamy custard)

Paella is the only thing I can think of....and I lived in southern Spain for 2 years...

I lived in Andalucia...
