How do you make the Stock/sauce that you put on Gerk Chicken and Rice and Peas?!


Question: Jerk seasoning

Toast 1/2C allspice berries, cool and finely grind.
In a food processor, add 2 bunches of scallions, 1/2C brown sugar, 6 cloves garlic, 2 - 4 habanero peppers, 1T thyme, 1t cinammon, 1/2t nutmeg, and the ground allspice. Start the processor and drizzle in enough lite soy sauce to make it a pourable consistency. This will keep for weeks in the refrigerator and is great on chicken, baby backs or a thick grilled New York strip steak.

As for the rice and peas, I don't "jerk" them, jsut mix 'em together.
