Answers: i dont really like to eat it alone and i dont know what else to do with it. any simple recipes if i can use it in paneer korma or palak paneer it would be great bt i dont want to try anything disastrous
cottage cheese tastes good with fruits. you can use cottage cheese to make fruit based or chocolate based desserts.
blend it with strawberries and chill it in the fridge.
you can even make tikkis out of it.
mash the cottage cheese with boiled potatoes, and add all the regular spices like red chilli powder, corainder leaves, salt. coat in bread crumb and shallow fry it.
have it as a snack with sauce and chutney.
no, it doesn't really work that well, because the cottage cheese is too granular. If you don't cook it too long, you MIGHT be able to get away with any low-fat cheese, especially if you freeze it first and put in the dish cold, so that it doesn't melt as the rest of the meal is cooked, but it gets warm enough to be edible when everything else has cooked.
Sometimes you can use queso fresco or stuff like that. I have even used mozzarella in palak paneer, because the greens cook quickly, but you have to be careful or you get runny cheese.
Good luck!
The texture of cottage cheese is crumbly and granular, and paneer is smooth and firmly packed. They are not interchangeable. If you want to use cottage cheese, try making a curry sauce for vegetables like this:
In a non-stick skillet, heat some butter or olive oil. Add curry spices to your taste. Beat in 1 tablespoon of corn starch. Then, add a pint of cottage cheese and beat vigorously until smooth. If necessary, add a small amount of milk to give the cheese mixture the consistency of a heavy sauce. Serve over steamed vegetables. My family always liked the sauce over a combination of steamed potatoes, cauliflower, and broccoli. It works well with other vegetables, too.
The best substitute for paneer is extra firm ricotta cheese or extra firm tofu (drain well). Cube and fry as you would paneer, then add to any recipe.
