Sticky rice pudding from the phillipines what is it???!
Answers: When they have a party at my mums work there is a lady from the phillipines who always brings this sweet rice dish which is really nice, it is very sweet and sticky and has like a sweet topping on it. I know it contains glutionous rice, coconut milk and i think condensed milk but have ni idea what its called or how to make it any ideas???
I think you are describing Biko. Here is one of the recipes we use here at home.
Biko
2 c malagkit (sticky rice)
3/4 c sugar
3 1/2 c diluted coconut milk
1/8 lb butter
1 lg egg beaten
TOPPINGS:
15 oz condensed milk
3/4 c rich coconut milk
2-3 T flour for quick thickening
Boil rice and coconut milk in a heavypot stirring constantly to keep from burning. When the rice is done and almost dry, lower the heat and add the sugar and butter. Mix well and set aside. When cool, add the egg. Spread the rice mixture in a well buttered pyrex dish and bake in a preheated 300 degree F oven for 20 minutes. Meanwhile, prepare the topping. Combine all topping ingredients in a heavy saucepan and cook over low heat stirring constantly until thick. Pour topping over rice mixture in dish. Increase oven heat to 350 degree F. Bake until top is brown.
