Not sure where Chef's go but I go to several places
If you're in brooklyn then Sahadi's is great for that.
If you're in manhattan then Zabars or Balducci's (Balducci's is more costly).
There are lots of options
from a wholesale distributor..
Or from their franchise owners..
If it is real fancy the chef may go to the farmers markets..???
