Filipinos- What's your pancit recipe?!

Just curious as to how others make their family's pancit.

My family's recipe includes cabbage (very thinly sliced), carrots (matchstick sliced), green beans (very thinly sliced) with pork or chicken diced small. Thin rice noodles and soysauce.

My family's recipe includes cabbage (very thinly sliced), carrots (matchstick sliced), green beans (very thinly sliced) with pork or chicken diced small. Thin rice noodles and soysauce.

Here are the two that I use.

Pancit Canton
Serves 4

1/2 lb pork, cubed
1 chicken breast
4 c water
4 T vegetable oil
2 T garlic, minced
1/2 c onion, chopped
1 T salt
1/2 lb shrimps, shelled, de-veined and cut lengthwise
1/2 c chinese sausage, sliced into 1/8-inch thick pieces
1 T pepper
1 T patis (fish sauce, use the Filipino fish sauce)
2 c Cauliflower, divided into flowerets
2 c snow peas
2 c cabbage, sliced into 1-inch strips
1 c carrots, diced
1 c celery, sliced
1/4 c scallions, diced (reserve some for garnish)
2 T soy sauce
1 T sesame oil
12 oz pansit noodles

In a stockpot, boil pork and chicken breast in 4 cups of water. When tender, remove from pot and slice into small pieces, about 1/2-inch strips. Reserve 3 cups broth.

In a frying pan, heat oil and saute garlic till brown; add onion and cook till transparent. Season with salt. Stir in pork, chicken, shrimps, chinese sausage, pepper and patis. Simmer for 20 minutes. Add reserved broth and vegetables. Season with soy sauce and seasme oil. Add noodles and cook till done. Season with patis and pepper to taste. Top with scallions.

Chicken With Sotanghon

1 chicken, cut into serving pieces
1 onion, sliced
2 clv garlic, crushed
2 T oil
1 sm bunch of green onions, chopped
salt and pepper to taste
1-2 T patis
1 c sliced mushrooms
1/4 lb sotanghon (soak in cold water, then when soft, drain and lay on cutting board and cut in 3" strips)
enough paprika powder to color and flavor (about a Tablespoon)

Boil Chicken till tender. Set broth aside. Remove bones from boiled chicken and cut meat into bite size pieces.

Saute garlic and onion till golden brown, add chicken and patis. Simmer for about 5 mins. Add Paprika powder and chicken broth and let come to a boil.

Add sotanghon (which has been soaked and cut). Add mushrooms and simmer for 5 mins. Add green onions, salt and pepper

I'm half filipino.. and i cook it by myself, because my mother cant be bothered.. I do most of the cooking anyway..

Cabbage sliced thin
Carrots cut thin
Green beens cut thin on an angle
With pork & chicken.. the bones boiled for a bit of stock
Thin rice noodles mixed with thick ones
Soy sauce
Pepper

I'm sure you can figure out how its cooked.. lol

Sorry can't tell you. There's so many styles. I see your recipe is the pancit bihon.

I love it!!! I make it once a week.It's a complete meal.Everybody at home loves it.I love it with chicken or shrimps.
