Does anyone know how to make Italian Bruschetta?!

This is the way I make it...and its pretty easy

I dice up tomatoes, garlic and combine it with a bit of Olive Oil and salt and pepper...you can leave this marinate to get more flavour but isn't necessary

Cut a baguette(or any other bread...pumpernickel is good too) into slices and put a tiny bit of olive oil on(can be omitted though as there is oil in the tomato mix...its a choice)

Put about a tablespoon of the tomato mix on the bread, spread it evenly and crumble a bit of feta cheese(tastes SO much better than melting mozzarella...Ive always had feta, adds lots of flavour that matches well :o) ) on top of the tomato mix.

Put it in the oven under the broiler until the feta starts to brown....yum yum yum!

I just squeeze some garlic onto bread or rolls, rub it on, spread some sauce and dice up my meats and sprinkle the cheese over it, finally toasting it in a toaster oven or conventional oven.

I chop Olives, tomoroes, and garlic. I add EVOO (extra virgin Olive Oil) and let stand, while I slice my bread. I place it on a george forman grill and drzzle with more evoo. When done, I slive Real Motz cheese. Put a slice on the bread and add the tomoato mix... YUMMMMM

Basic recipe

4 slices of crusty white Italian-style bread or baguette
2 cloves of garlic, halved lengthwise
2 tbsp. extra virgin olive oil
Salt and pepper

Add 2 Italian tomatoes

Bruschetta col basilico

Add 4 basil leaves

Bruschetta col salmone

Add 100 g (3 1/2 oz.) smoked salmon
2 green onions, finely chopped


Method
Basic preparation
Toast the bread under the broiler for a few seconds - it should be crispy. You can also toast it on the barbecue and prepare your appetizers outdoors without having to slip away from your guests. Rub the bread with the garlic clove; drizzle with olive oil. Season with salt and pepper and serve immediately.

"Col pomodoro" version - with tomatoes
Wash the tomatoes; blanch for 1 minute in boiling water; drain and remove the skin - this is the easiest way to peel a tomato quickly. Cut the tomato into small dice. Place the tomatoes onto the toasted bread that has been rubbed with garlic. Drizzle some olive oil over top, season with salt and pepper and serve immediately.

"Col basilico" version - with basil
You can prepare the basil version starting with either the basic recipe or the tomato version. Finely snip the basil leaves using scissors. Place on toasted bread that has been rubbed with garlic, or on top of the tomatoes, depending on the version you choose. Drizzle some olive oil over top, season with salt and pepper, and serve immediately.

"Col salmone" version
Place a few strips of smoked salmon onto toasted bread that has been rubbed with garlic; sprinkle with a few pieces of green onion; drizzle with olive oil, season with salt and pepper and serve immediately.

I put some basil and a shallot

i take the oil and brush it on the bread and rub on the garlic.
then i cuz a tomato or rub it on there either way. put a little basil and yummmy
