I need rice stick recipes that do not involve frying.?!


Question: I just found out I am allergic to gluten, wheat and several "alternative"grains. The only recipes I can find for rice sticks involve frying and I can't do that. The package does not have any directions and I would love to learn to cook this. Are rice sticks and chinese noodles the same thing?
Any help/advice is appreciated.

Well, you could boil the rice noodles, and eat them cold with a variety of pickled vegetables, grilled meats, or seafood. Vietnamese restaurants offer this kind of dish, it's pretty good.

Or you could make soup.

the mung bean noodles are absolutely amazing. they are round and look like rice noodles when theyre not cooked but when you cook them, they turn clear. they have a nice sort of chewey texture, but are also very smooth and you dont even have to chew them, you could jsut swallor them whole.
