I once catered at an Assyrian wedding, they had this white rice with what looked like a yellow spice?!

Saffron is most likely the yellow spice used with basmati rice..is is the world's most expensive spice used both for cclour & distinctive flavour ,at a wedding reception it would most certainly be saffron.
To tell you what the dish is however would be very difficult ,without knowing more about the other ingredients or cooking style,not to mention ignorance of the particulat cuisine.you mention.
Had it been an Asian dish i would take a wild guess & say 'Biryani'

Probably saffron. But could also be tumeric in the rice. Lots of yellowish curry spices..

It could have been curry or saffron. Both add distinct flavors and colors.

Saffron or turmeric.

The yellow color of curry is actually turmeric. 'Curry' is NOT a spice, it is a combination of various spices.
