What is the differences between Beijing Chinese food, Cantonese Chinese food, and Schezuan Chinese food?!

Beijing is in the Northern part of China and was once ruled by Mongols. Traditional food from Beijing relies much more on wheat and less on rice, which does not grow there. They also tend to rely more on mutton.; Canton is on the ocean and was the headquarters of the dinizens of European trade during the 1700 & 1800's. Food there tends much more towards rice & seafood and is fairly mild. Schezuan is "country" food that tends to be full-flavored and sometimes downright hot, depending on who is doing the cooking.
