Here js a simple and good once for you to check out.

It's really very easy. You should cooked the rice in boiling milk with lemon skin and one cinamon stick and some sugar. It's better the milk with little fat. You should pour a lot of milk. At least three cups of milk for each cup of rice. And probably you will have to add more milk while it is cooking. It is finished when the rice is vey soft, and with a bit of milk. It should not be dried thoroughly.

Put the rice in the oven in a Pyrex dish with lots of evaporated milk and sugar (make sure its sweet), and a little vanilla. Have it at least 2" above the uncooked rice...Bake until brown on top and rice is cooked.

Arroz con leche------Rice Pudding

1 cup long-grain white rice
2 cinnamon sticks
1 tablespoon lemon zest
3 whole cloves
4 cups water
1 egg
3 cups whole milk
1 (12-ounce) can sweetened condensed milk
1 tablespoon vanilla extract
1/2 cup raisins, optional

Soak the rice, cinnamon sticks, lemon zest and whole cloves in the water in a heavy saucepan for 1 hour.
After soaking, bring the rice mixture to a boil on high heat, uncovered. When it starts to boil (about 5 minutes), lower the heat to medium and cook for 10 to 12 more minutes or until water is almost evaporated.

While rice is cooking, beat the egg in a bowl. Add the milk and stir well to mix. Add the egg mixture, vanilla extract and condensed milk to the rice and cook over medium-low heat, stirring carefully, until it thickens slightly or until desired consistency, about 25 to 35 minutes.

Let cool uncovered.

Note: be aware that as the rice cools it thickens. The finished product will be thinner than traditional rice pudding.

Baked Rice Pudding

3 slightly beaten eggs
1? cups milk
? cup heavy cfeam
1? cups cooked rice
? cup sugar
? cup raisins, optional
1 tsp. vanilla
? tsp. salt
ground cinnamon and nutmeg

In bowl, combine all ingredients. Mix well. Bake in a greased 10x6x2" baking dish at 325oF for 50 minutes till knife inserted halfway between center and edge comes out clean. Serve warm or chilled. Serves 6

VANILLA SAUCE:
? cup butter
? cup brown sugar
? cup heavy cream
2 teaspoons vanilla

Combine all ingredients in saucepan, whisking, and bring to a boil. Remove from heat and serve over warm rice pudding.

It means, literally, Rice with Milk. The best way to cook it is 1 cup of rice in 4 cups of water. Simmer while stirring constantly. As it thickens and the rice becomes bloated, add the milk, sugar, cinnamon sitck. The lemon peel could be added last. MIlk added too early could curdle.

In the Philippines, we have a version called Champurado. It contains cocoa powder, and is great for midnight snack or breakfast, with salted fish or beef jerky to balance the sweetness.
