tostadas- easy way.

tostadas any brand is good, sour cream, lettuce, tomato, mexican cheese the one that crumbles, refried beans in a can

cook the ground beef of course then you get the tostadas and put the beans and then sour cream or you could put the sour cream on last...anywho after beans put ground beef ,lettuce and tomato and then the cheese.

you could also use steak and chop up in rather small pieces instead of the ground beef.

you could take all the stuff with you cooked and let everyone put their tostada together.

jalapenos...stuff em with cream cheese and wrap them in bacon and bake them in a 400 degree over for about 45 minutes.

what about fresh home-made salsa and guacamole. That way you can dazzle everyone with easy dishes!

Kickin' Chili Tamale Pie Recipe courtesy Emeril Lagasse, 2007





4 cups leftover Kickin' Chili, or your favorite chili
2 cups warmed chicken broth
2 cups milk
Salt
1 1/2 cups yellow cornmeal
4 tablespoons butter, divided
1 cup cooked corn kernels, drained
1 cup grated Cheddar
4 tablespoons grated Parmesan


Heat the leftover chili in a saucepan until warm. Cover, remove from the heat, and keep warm.
In a large saucepan whisk together the chicken broth, milk, salt, and cornmeal and bring to a boil over medium-high heat, whisking frequently. Reduce heat to medium-low and simmer, whisking occasionally, until thick and smooth, 6 to 8 minutes. Remove from the heat and stir in 3 tablespoons of the butter.

Preheat the oven to 375 degrees F. Butter a shallow 2 quart casserole with the remaining tablespoon of butter. Spoon 1/3 of the cornmeal mixture evenly over the bottom of the casserole, then top with the warm chili. Sprinkle the corn over the top of the chili, then spoon the remaining cornmeal mixture evenly over the top of the casserole. Sprinkle with the Cheddar, then top with the Parmesan. Bake until filling bubbles around edges and top is golden, 20 to 25 minutes. Serve hot.

Mexican Lasagna

Okay, here you go....(Only if you want REAL mexican)

Peel and slice 2 fresh BIG cucumbers.

Take them to the party like that, but bring with you:
2 juicy LIMES
1 bottle tapatio or valentina salsa
SALT

When you get to the party, squirt lime juice from one lime over the cucumber slices. Sprinkle with 1/2 teasp salt. Sprinkle with about 1T hot sauce. Then sprinkle with the juice of the 2nd lime. Toss it a little, and serve them with toothpicks on the side to pick them up.

These are HOT.....and VERY mexican.
My husband is from Jalisco, and his family eats this almost every day.

I hate to inform you of the other answers, but people do NOT eat velveeta or cheddar cheese in mexico.

To add to gg's response, you can include slices of mango, jicama (like a turnip/potato), pineapple, papaya or guava. Cut them into long slices, put them in cups, then squirt the lime juice and tapatio chile over them ( just a few splashes other wise those that don't normally eat spicy food might suffer.), and a tiny bit of salt, or if you can find lime flavored salt....and there you go!
