What vegetable has the highest nutritional value?!

Question: peppers, mushrooms...other?

Answers: peppers, mushrooms...other?

Define nutritional. Are you looking for a specific vitamin or mineral? or protein or fat? etc. Generally, the darker the vegetable, the higher the vitamin and mineral content. Broccoli and all the cruciform family (brassicae) including cauliflower, sprouts and cabbage are considered tops for antioxidants and even anti-cancer claims. Ideally, have a variety of vegetables and fruit, each one offers something different to our organism so try to have several different colours at each meal. And at least five to seven servings of vegetables, plus two or three pieces of fruit, daily. Aim for ten total, not five.

Kale scores very highly, though it is not for everyone being quite bitter
