Spring rolls, California rolls, or Sushi?!
Answers: Which is best. I have had spring and california rolls but what about sushi? Which is good to try if you've never had the real deal before?
Okay, so this is a hard question to pose or to answer. Three different things. Springs rolls are typically deep fried, filled with cabbage and pork and maybe shrimp, and tend to appeal to American tastes. If you like deep-fried foods (any!), this will be to your liking. California rolls are crab and avocado and rice--nothing raw, and fairly simple, bland, and commercialized. they can be delicious, but they're really the entry-level Japanese food. Sushi, on the other hand, is a very complex and interesting category of foods. It just means raw fish...on rice,. So it could be as mild as scrambled eggs of cooked shrimp, or as "challenging" as the menus call it, as mackere or sea urchin. So...my suggestion is, just try the whole experience. Most offer a sample, a range of fish and preparations in a omikaze (chef's choice) sort of platter. They're all going to be interesting and different in terms of textures, and subtle flavors. Try NOT to douse everything in soy sauce and slather everything with wasabi (the Japanese horseradish). See what the subtle flavors and textures of the fresh fish can be. Enjoyl It's a great cuisine...if you let the chef guide you.

Perhaps it's just because I'm a food snob on my high horse but I was given to understand that California rolls were in fact sushi?
california rolls are part of the sushi category. Sushi rolls (japanese) are great! Spring rolls (vietnamese) are good..lol
All rolls are great. Especially the rolls with raw fish. So I definitely recommend some nigiri sushi if you want to try something different. Sushi comes in various forms. Rolls, temaki (hand roll), nigiri sushi, pressed sushi, chirashi, etc. Try nigiri for a different experience than rolls because most nigiri are raw and have a great taste. (If it's fresh also)
California rolls are sushi, but are cooked. Sushi and sashimi are fabulous and if you are willing to eat raw fish, try them all. Salmon, tuna, and yellowtail are the most common raw variety either in rolls or sashimi form. If you want to start with cooked stuff, try spider roll (soft shell crab tempura), shrimp tempura roll, any of the rolls with crab or shrimp are cooked. On the sashimi side, Unagi is cooked freshwater eel. Don't be freaked by the fact that it's eel, it is delicious and just like eating baked fish. Be adventurous, there is great stuff to enjoy.

I would say try fresh salmon and yellow tail first.
I like to squeeze fresh lemon on my salmon and dip in Low sodium soy sauce. Yummy!!!!
Find someone that's been eating sushi a Long time and have them take you to the best one they can find. Don't be afraid to try new things each time. Keep an open mind. Don't eat raw oysters unless you are in a really good restaraunt.
I like toro, fresh salmon, yellow tail, uni, onkimo, oysters on the half shell, giant clam. Just about everything.......except nauto! < forgive my spelling.
Most beginners start with rolls and hopefully progress from there.
