4-6 servings 45 min 15 min prep
Change to: servings US Metric
1-2 lb lean pork, adjust according to preference (more meat than kimchee or vise versa)
2-3 cups sour kimchee, cut in 1 inch pieces
1/4 cup juice, from kimchee (optional)
2 tablespoons soy sauce
1/4 cup water
1 dash salt and pepper
2 tablespoons crushed red hot peppers
2 cloves crushed garlic
Cut pork in bite-size chunks or strips.
Combine all ingredients into saucepan and bring to boil.
Stir occasionally.
Simmer over medium heat until kimchee is tender.
Serve with steamed white rice.
Note: This recipe is not as liquidy as traditional chigae (stew).
Variations: pork ribs can be used as well, suggest boiling sliced ribs and draining fat prior to cooking w/kimchee.

thats a perfect question for me I,m korean and kimchi soup is korean food. kimchi soup is this. add kimchi in water and boil the watter and kimchi together and it will be red.

BUT.... In Atlanta at the Asian Food store, I've seen Kimchi onions, leeks, scallions etc etc.. and everyone I've tried so far have been great!
While MOST of the times it's eaten cold... (Heating changes the flavor and normally is NOT done)
My wife is from Indonesia and she thinks eating Cold foods wil give you colds or flus or sore throats and such...(laughs)
I always find a way to cook it for her is a dish.. and eat mine in the closet... cold!

Kimchi, the Korean pickles (fermented) composed of chili, cabbage, ginger, daikon raddish and other vegetables, is great by itself or added to other dishes.
I myself simply add half a cup of kimchi to instant ramen noodles for a dramatic change in taste and nutrients.
