Okinawa Japan question... I dated a marine who made a taco rice thing like he had in Okinawa. Recipe?!

Now that you brought it up...yumm. It was just white rice with taco flavored ground beef, lettuce, tomato, and black olives on it with salsa. Thanks for the memory, I will have to make some up next week. The hard part will be finding the "sticky rice" they use in Japan.

note: in recipe1, you can simplify the recipe by substituting all the spices used with prepackaged taco seasoning. for the rice, use calrose, or similar.

If you want sticky rice add 1/2 cup of sugar per every 2 cups of rice you are making.

taco rice

J-Mex fusion of Tacos and white rice. This dish hails from Okinawa, where the foods of the military folk blend with that of the locals. Choose whatever meat (or tofu) you like.

Prep time: 15 minutes
Cook time: 20 minutes
Servings: 2

Ingredients
1 cup calrose rice, uncooked
1 cup onions, chopped
1 cup lettuce, sliced
1 cup tomatoes, diced
1 bell pepper, sliced (optional)
2 cups beef (optional)
2 cups chicken (optional)
2 cups fish (optional)
2 cups pork (optional)
2 cups firm tofu (optional)
sour cream, to taste (optional)
taco seasoning, to taste
1/2 cup cheddar cheese, shredded (optional)
Directions
Start cooking the rice (enough to make 2-3 servings)
Chop or shred the meat/tofu. You can do it however you like, but it needs to be in small enough pieces to fry well
Heat a pan on the stove at medium heat
With a little bit of oil, start cooking the meat or tofu (if tofu, add whatever flavor you would like. Perhaps some garlic, soy sauce, or taco seasoning)
While that is cooking, chop the onion and add it to the meat/tofu. When the meat/tofu is starting to get cooked, add the taco seasoning (I like McCormick taco seasoning). If it looks fully cooked and the rice isn't yet done, set the heat to low so you don't overcook
While watching and stirring the meat/tofu and onions, slice the bell pepper and lettuce, dice the tomatoes, and shred the cheese. Set aside. If you like, you can cook the bell pepper with the meat
When the rice is done, put a serving of it on a plate, top with lettuce and tomato, scoop on some of the meat/tofu mixture, add the sliced bell pepper, sprinkle with cheese, top that with sour cream and apply your favorite hot sauce! Deiji Maasan!

Taco Rice

1 lb ground beef or ground chicken or ground turkey
1 cup onions, diced
1 package taco seasoning mix
1 (16 ounce) can tomatoes, diced
2 cups white rice or brown rice
2 cups cheddar cheese, shredded

ASSEMBLY Brown meat and drain.
Combine meat, onion, taco seasoning packe t, cooked rice and tomatoes in saucepan.
Simmer until thick - about 30 minutes.
FREEZING & COOKING Cool, label, and freeze in bags or rigid containers.
Also freeze a ziptop bag with 2 cups of shredded cheese for each meal.
TO SERVE: Thaw completely.
for taco salad, warm over medium heat. Serve with lettuce, taco chips, tomatoes, sour cream and the enclosed cheese. - - - - - - - - - - - - - - - - - - NOTES : I made with Uncle Ben's Rice. My kids rolled it up in warm tortillas to eat. I ate with fat free sour cream and salsa.
It can also be used as a burrito filling.
It was better than I expected.
