Some places make California Roll with crab stick and some make it with real, shredded crab. It's still called California Roll. Just check the description.

If it is imitation crab meat, it is call Surimi.

i don't think i know one with shredded crab but there's one with soft-shelled crab. it's called spider roll.

Genuine crab is called kani in Japanese. Surimi is similar to kamaboko and chikuwa: fish is finely ground, bound together with a starch such as flour, and cooked until firm. Surimi is usually artificially coloured and flavoured, then shaped to resemble crab claws, lobster tails, shrimps etc. Good quality kamaboko is not coloured, and sometimes (the expensive kind) it is formed on a slab of pine wood which imparts its own flavour. Chikuwa is shaped on a skewer and grilled so it has a slightly charred look to it. They are all good ways of making the best of small or bony fish that would be difficult to eat unprocessed.

It's a imitation crab and called surimi. It's made from white fish.

Still California, but different places might use a type of crabstick that shreds. If it has some mayo then it's a California Salad roll.

More upscale places will use real crab, but it will usually say that on the menu.
