a really good and tender corned beef, preferably home made. Love it the next day when making Reuben sandwiches of the leftover corned beef with the kraut and swiss, grilled with mustard and dill pickles on buttered rye bread.

Ham, roast chicken, roast pork, fried chicken, any BBQ, lamb, bacon.

Try it with potatoes. It balances out the bold flavor of the saurkraut. Layering sliced sausage or ham in a pan with saurkraut and potatoes is excellent. Cook it that way and the flavor is really impressive.

Kasseler, with sauerkraut and mashed potatoes, is another great "sauerkraut" dish.
Kasseler is cooked ham.

There are tons of great things you can do with sauerkraut. Rather than me trying to describe inexact recipes, I suggest you go to http://www.foodnetwork.com and type sauerkraut in the search field. You'll find tons of fun recipes. Some complicated, some easy.

Try making Transylvanian Stew....

saute onions
cut up some country style pork ribs and add them to the onions and brown the meat a little then add sauer kraut (rinse in clear water if too sour before adding)
add a laurel leaf (bay leaf)
some marjoram
and caraway seeds and let simmer until meat and kraut is tender,
then add about a Tbsp of paprika
and top with sour cream and serve with rye bread

i love it

Sauerkraut is really good with pierogies!

My 'rents are Czech and we sometimes have sauerkraut with dumplings. Mmmmmmm =P

Try some pork chops or spare ribs, with apples
That kraut sure rounds out that dish!!

Cook it down with onions and sliced apples and serve with pork.

Cant go past beautiful creamy fluffy mashed potato!

Classically it goes with Beef Strogonoff (strips of marinaded rump, smoked Hungarian paprika, cream yogurt, touch of mustard) latkes (shaved onion and potato, mixed, fried in little cakes) and red cabbage braised in cider with apple, cinemon and ginger. See our menues:
