What do you think about the Moroccan gastronomy ?!

Question: I love all Moroccan food. I used to live above a Moroccan restaurant which I spent a lot of time in.
I love cous cous and lamb tagine with apricots, that's my favourite.
I love to know how to cook it authentically, I have a tagine pot at home.

I utterly LOVE Moroccan cuisine!!! I found this cook book called Medina Kitchen and wow the dishes I have dishes that have come out of my ktichen are so full of flavour ...quite yummy!
Last night I made Mashi dolma ( was totally proud of that!!) and the night before lemon and corriander Chicken tanjine with lots of Ras El Hanout !!

I think Morrocan food in terms of flavour and colour is hard to beat!!
