Some help with italian food....urgent?!


Question: well, my boyfriend loves italian food, and i dont know a single thing about it..
can someone tell me what dishes r included in italian food, and describe the taste a bit, spicy or not, or eaten with some sauce or smthing...any speciality...

italian food is very tasty , colorful , the freshest veggies should be used when making it , a lot of diff shaped pastas are avail , typically you'll find spaghetti-angel hair-linguine-lasagna-manicotti-ravioli-... + small shells etc. their are prob over 50 of them . i would sugg trying a manicotti for a first timer , get a good recipe + enjoy. sauces are varied , from tomato based to cheese based , even things like pesto . i always use extra virgin olive oil when preparing any italian dish , you can't cheat w/ this flavor .

Spedini alla Romana

4 slices of white bread
4 slices of prosciutto
4 slices of mozzarella cheese
flour for dredging
2 large eggs beaten
vegetable oil
4 anchovy filets
2 tablespoons of butter

Serves 2

1. Place one slice of bread on working surface, then place 2 slices of prosciutto and 2 slices of mozzarella on top of bread and then place another slice of bread on top.
2. Trim the crusts, cut in half forming 2 rectangles and place 2 toothpicks through each of the rectangular sandwiches to hold together. Repeat using other 2 slices of bread, mozzarella, and prosciuto.
3. Dredge each spedini in flour then dip in egg, covering all sides.
4. Heat remaining 1/4 cup of olive oil in large saute pan over medium heat. Heat about 3 inches of vegetable oil in a large saute pan over high heat.
5. Place spedini in pan and fry on both sides until brown.
6. Place spedini in serving plates and remove the toothpicks.
7. Melt 2 tablespoons of butter in a sauté pan over medium heat.
8. Add anchovy filets and sautee until anchovies are heated through.
9. Pour anchovy sauce over spedini and serve.

chicken parmigiana is good to begin with , lasagna also, not really spicy

it depends where you are,

if you are on the east coast it is a poorly executed morrass of soggy pasta awash in canned red sauce.

in the mid west it is a cop out, flavorless and awash in greasy fat from the cheese and meat that it is laden down with

in california it is an endless series of pizza permutations and over elaborate descriptions

in italy it is a subtle and simple cuisine of the common people that uses the local bounty in frugal and delicious ways

if you want to cook like a real italian go to a farmer's market and lookaround, see what is good and fresh right now and cook it simply

being Italian, i find that different Italian families cook differently...it's been said that this is because we cook w/our hearts......but it is also b/c of the region your family is from.....Italian food can be all of what you already said...spicy, not so spicy...creamy or tomato base sauces or both combined!....some Italians use wine in there red sauce..others like my family do not....some put sugar...some don't....the food can also be very light using citrus flavors or seafood dishes or all veggies........i would try a very simple recipe first that does not have a lot of ingredients....also find an Italian friend that cooks and is willing to let you in there kitchen.......I'm always teaching or sharing info w/my friends and co workers..........hope this helps!

Have a lot of spaghetti sauce and pasta on hand. The foundation of Italian cooking. Some garlic salt too.
