Where should I store an opened jar of ghee? Refrigerator or pantry?!

Clarified butter or Ghee can stay at room temperature in the pantry.

As it is clarified butter, it will rot eventually. The fridge I'd suspect.

Store it in the fridge. Although it will keep for a few weeks at room temperature, it will start to go rancid (the fats break down into fatty acids, giving off a bad odor). Run some hot water on the sides of the jar every time you want to use some (it is hard as a brick in the fridge) and return it to the fridge when you're done with it.

The first 2 are right with the refined oil and now the milk products removed it is stable on the shelf for 2-3 months, I use both the regular and veg type, I was achef for over 20 years and we used alot of it in Singapore, and never refrigerated, it goes hard and is difficult to get out of the jar.

ghee is clarified butter meaning it is butter void of protiein and moisture. if it is a good quality ghee such as nanak, you can store it at room temp before and after opening. however you must ensure that you do not use a wet spoon to scoop out the ghee. it is the moisture that makes the ghee rancid. also store in a cool dry place with the lid firmly closed. refrigeration is not necessary. generally ghee is good for at least six months
