What's a great winter vegetable dish?!


Question: I'm going to a potluck baby shower, and I'm bringing a veggie dish. I'm feeling really uninspired. I'm a single girl, so I do most of my cooking in one big dish and don't think much in terms of "sides" and "main courses." I like to do seasonal and regional (mid-south) foods as much as possible. Any advice?

Parsnip Hotdish with Horseradish !!!
Oh my !!! I hope you can find the recipe, because with the info you included, ie.- veggie dish, uninspired, single girl, one big dish,don't think much, and regional(mid south)...this is PERFECT and so very TASTY !!! My mom would make it for special occasions and celebrations...yum !! it has peeled parsnips (julienne), sauteed onions, garlic, parsley.....bread crumbs , half and half, and an egg and a wee bit of worsteshire(sp.) sauce....try google, good luck, it is wonderful, you and your friends and even that baby are gonna love it !!! the mom to be should eat lots ! the child will be special and a great eater too !! you are welcome !!!

Slice up zuchinni, onions and tomatoes and layer them in a casserole dish, drizzle with olive oil, and top wtih mozzarella cheese. Bake until veggies are soft and cheese is gooey on top.

You can bake beets in the oven and surround them with green beans.
peel the beets and sprinkle salt, pepper and drizzle a bit of olive oil on them, cover and bake until tender (about an hour)
Saute green beans with garlic and olive oil or you can also grill okra with salt and pepper. They also taste ok when they are cold.

butternut squash , acorn squash , spaghetti squash recipe is the same for all 3 . cut in 1/2 lenghtwise , scoop out seeds { save for roasting if you like } rake inside slightly w/ knife , put upside down in pan w/ 1/2" water cook at 425 for 45 min , flip , smear butter inside , sprinkle brown sugar inside , finish cooking -about 40 more min

Summer Squash.

Corn beef and cabbage. A winner everytime.

I like butternut squash soup. i just microwave the squash cut length wise face down in an inch of water in the microwave untill they are soft. Scrape out the insides, mash, add a litle b utter, milk(fat free skim) and majoram, sea salt and craacked pepper. you can totally omit the butter for a filling healthy dish.

Why not scalloped potatoes? Easy to make, and everybody loves potatoes, which go well with any main course.

For winter, I would make a huge pot of vegetable soup....
Actually, "monk's broth", which is a veg soup with pearl barley, lentils and green beans in it, apart from the usual potato, onion and carrots that make up the base of a vegetable soup.
You may want to do something else though, so how about a vegetable curry, or a potato bake?
You know how to make a potato bake?
Slices of potato in to a casserole dish covered with a sauce and in to the oven or microwave until the sauce has cooked the potato through.
Or what about a vegetable Jambalaya?
Simply cook up some rice.
In a sauce pan do a simple stir fry veg, (get them frozen at the grocer) and when the veg is done, add the rice and mix well....
Add spice it you like., Usually I add "Robertson's herbs for veg", which compliments that dish perfectly...
