Is anyone good at identifying authentic Chinese food by description?!

Question: A spicy, sort of BBQ meatball, about the size of a cat paw or bouncy ball, they call it "meatball" but its crunchy on the inside and has some hard bone type stuff in it.
A green leafy veggie that resembles romaine lettuce, usually cooked in soup.
A very large fish, served whole...they eat it a lot....its about the size of salmon.
Little eggs, little bigger than robins eggs.

the meatballs probably contains chopped up water chestnuts. that adds crunch to it. they are a popular dim sum dish.

the vegetable is probably some kind of spinach.

the fish is a sea bass, steamed whole with ginger, and then at the end, a sauce made up of hot oil is poured over the top.

the little eggs are quail eggs.

I think the green leafy stuff is Napa Cabbage, sometimes called Chinese Cabbage- the rest who knows?? Bones?? Baby eggs?? You like this??

The only one I am familiar with would be the lettuce. It is probably bockchoy. They sell it in most grocery stores. It is very green at the tops, but the closer to the bottom you get the more it looks like a stalk of celery.
