Obviously pastas come up but favoring Southern Italian food keeping it simple is generally the way to go. Tomato sauces starting with sauteed garlic and onions and then adding peeled seeded crushed tomatoes and some tomato paste and juice to the mix. Simmering for a few hours with some fresh basil, a bit of salt and pepper and a splash of red wine. So delicious.

Also as simple as slicing tomatoes, fresh mozzarella. Place tomato slices down first, a basil leaf on that, a slice of mozzarella on that. Some add capers other's add just olive oil. My preference is to do olive oil and balsamic vinager with a lil cracked black pepper. (Real summer treat there.)

Yep, simplicity is the key. If youre going to make a Parmesan cheese (for example), do not add to many other condiments or spices. You must let the flavor of the main ingredient take center stage, if you know what I mean.

Garlic, keep a lot of garlic at hand. Cheese too.

Italian cuisine can be as simple as a poster's suggestion of fresh mozz. cheese, tomato, & basil to feasts such as The Seven Fish on Christmas Eve that takes days to prepare, Pizza Rustica, a complex Easter pie of cheeses and diced meats (sausage, ham, etc), Pizza 'Scarole that simmers for 8-10 hours or Genovese, a thick onion sauce that is poured over a tender pot roast, and simmers for 5-6 hours. Our cooking is pure and humble. We never waste a morsel, can prepare a feast with any ingredients in our cupboards, and leftovers can be re-designed to be fit for a king.
