Question: Picadillo Tacos

In a large frying pan or pot place 2 lbs ground beef, 2 white onions diced, 2 green bell peppers diced, 1 peeled diced potato, then cook together until beef is slightly brown (still lightly pink okay, it'll finish cooking on simmer)...drain mixture (grease) through colander.
Place mixture back in pan and add 1 large can of diced tomatoes with juice, 2 huge pinches of cumin, 2 huge pinches of garlic powder, 2 huge pinches of chili powder, and salt/pepper to taste. Add enough water to cover mixture. (1 to 2 cups) Bring to a boil, cover and reduce heat to low. Simmer for 20 minutes until potatoes are soft. Keep warm at work in a crock pot. Serve with fresh flour tortillas and salsa.

u can get salsa named casa mamita, refried beans, its like mexican dip for chips. its really good. you can also check out http://mexicanfood.about.com/ for mexican food recipes and tips.

Rice would be good because it would be easy and you could just keep it warm. Or maybe a 7 layer dip with chips.

Nachos, Tacos, Salsa con queso, Taquitos (frozen section in a store, heat and serve!), small quesadillas, Tamales, beans and rice

do some of that 7 layer dip, look up the recipe or i think you can buy it in the deli section of your supermarket, i have done both , usually people love that stuff

steak quesadillas and fajitas and tacos are always delicious

Make chili con carne. It's made of red kidney beds with gound beef.

Make an easy layered dip:

1. use hand mixer to blend 1 block of cream cheese with 1/3 cup mayonnaise
2. spread mixture in bottom of a shallow round casserole dish
3, next top the cheese mixture with salsa
4. then top with grated cheddar or mexican blend cheese
5. serve with tortilla chips for dipping

This dish is always popular when I make it and there are never leftovers

One thing that is missing a lot in Mexican food is any kind of dessert.

If you cut 10" flour tortillas into triangles, you can deep fry them in about an inch of oil until barely brown(flip while they fry) and then shake them in a paper bag with cinnamon sugar. Bring honey (vanilla ice cream goes great with it too--bowls and spoons)

It's VERY easy and pretty cheap too. Just make the same day because they will get tough after a few hours.

Spanish Green Rice

1 bunch of fresh cilantro
1 bunch of fresh green onions
1 can of chicken broth
2 cups of rice
1 teaspoon oil.
Pinch of salt & pepper.

In a blender put cilantro and green onions, blend on low, slowly pour in broth. Until all is a bright green liquid.

In a saucepan, pour oil and rice, stir until rice becomes golden brown over medium heat.

Then on low heat slowly pour sauce and simmer until sauce cooks throughout rice. Add salt & pepper.

Served cold or warm. Tastes great.

This is the Mexican dish every one asks for...

Buy a package of frozen bean burritos.....(8-10 in a package)

Deep fry them..... cut them into 8-10 slices.....and set in baking dish on top of some spaghetti sauce that you added chili powder to........ cover with remaining sauce and top with shredded cheese..... Bake at 350 degrees for about 20 minutes until bubbly and the cheese is melted and lightly browned in a few spots.....

stuffed green peppers with rice and pepper jack cheese and chili powder

Get those packages of prepared guacamole dip. If you want it to look classy get a few sprigs of Cilantro to chop up and sprinkle on the top or get a Jalapeno pepper and cut it into thin rings to put around the top edge for decoration.

go to the closest mexican store, and see if the have fresh tortillas, get some chicharon with lime and hot sauce. chicharon comes in two forms, one is like pork rinds, the other is like a crunchy fried corn snack. take the crunchy goodness put it in the fresh tortilla and add lime and hot sauce....i am telling you it will be an act of culinary ecstasy

get to packages of tostadas (you will find it at any grocery store)
sour cream
ham
lettuce
1 can of tomato sauce
red onion
mexican hot sauce(el tapatio) or (huichol) you most likly will find el tapatio.
and limes
all you have to do is boil the can of tomatoe sauce with same amount of water.1can water 1 can of t. sauce
chop the lettuce and slice the onion


take averything there it wont be messy.
spread sour cream on tostada
put a slice of ham
add lettuce and little onion
put the tomatoe sauce(about 2 spoons for tostada)
hot sauce(optional)
and squish lime juice and you are al set
very simple
very,very good tostada and it can be americanized but is full mexican flavor, im mexican and me and my family and my friends love this. just try'em i bet you will love 'm

Tacos, some ground beef and maybe some lettuce and tomaotes for them
