Since I live in New Orleans, I think I can answer you. Any cookbooks by Chef Paul Prudhomme would be good. Also, there is one by a New Orleans native, Tom Fitzmorris and the title is "New Orleans Food". It is very inexpensive (14.00) and you can purchase on Amazon. ANd then, you can google online under New Orleans Recipes and print out recipes free. See link below.
