Good Black Beans and Rice Recipe?!


Question: Something that doesnt require a ton of ingredients please, I'm new to cooking so I dont have many spices, and I'm going to be poor for the next couple of weeks.

Don't care what type of cuisine it comes from - I just have several cans of black beans I need to use....
If you have a recipe you really like, I'll try it if possible

Try this one! It is very easy and has very few ingredients:

INGREDIENTS
* 1 cup uncooked white rice
* 2 tablespoons vegetable oil
* 1 (10 ounce) package frozen green bell peppers and onions
* 1 (15 ounce) can black beans, undrained
* 1 (10 ounce) can enchilada sauce

DIRECTIONS
1. In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
2. Meanwhile, heat oil in a large skillet over medium heat. Saute peppers and onions until tender. Stir in beans and enchilada sauce; simmer 15 minutes. Serve over cooked rice.
