Authentic La Paz Batchoy has "lapay" which is the spleen. The spleen is sliced thinly diagonally. Lapay tastes like a cross between liver and kidney.
Ingredients: liver,noodles,meat,toasted garlic,cabbage,spring onions.
Preparation:
prepare the broth (beef/pork)
in a bowl, put the noodles,cabbage,thinly sliced meat n liver
add black pepper and the toasted garlic
pour the hot broth.add boiled egg if you want.
