It's best to stay veg in India unless you eat at high end restaurants or 5* hotels.

My friend went to a good/decent restaurant and ordered tandoori chicken. He thought the tandoor heat would kill just about anything. He ended up with severe gastro problems for 3 days. Turns out they made the chicken at 9am and served it to him at 2pm, it sat out the whole time.

This is common in India everywhere (not just Kerala). Never eat raw salads, precut fruit & veggies.... also watch the water. Remember that chutneys are made with local water. Your samosas & pakoras may be deep fried but the local chutneys and sauces are not made using boiled water. Milk is often not pasteurized, it may be buffalo milk also (it has a high fat content and is not easily digestible if you are not used to it). Lassi off the street, milkshakes...all use local water.

Best best: stick to 5* hotels & restaurants. They may be more expensive, but in the end worth it. I dont mean to alarm or scare you, I have travelling to India for years.

But I grew up in the US, you may just have a stronger tolerance to eating foods off the street.

I've been to India many times, have eaten all kinds of street food & @ beach shacks. The only time I ended up with food posioning was after I ate at a 5* hotel. I wouldnt worry.

Remember just barfing a meal.,, may not be anything more than a glass or cup that was still soapy. Not some evil bug...

I think if you stay away from raw foods, like salads and vegetables and certain fruits and fruit juices you'll be fine. all cooked meals are better to stick to.

Because you can't rely on their use of refrigeration like at home. The meat in the kitchens could be left out in the open and covered in flies. When in India, just eat the vegetarian food. It's common and popular and delicious. I have been to India a number of times in my life and have never had a problem.

Eat Indian style. The spices are there for a purpose.
If you long for a European type meal, keep longing. I have also had bad experiences in 5-Star hotels in India when I ordered a European style meal.
