ORZO WITH PARMESAN AND BASIL

3 tbsp. unsalted butter
1 1/2 c. orzo
3 c. chicken broth
1/2 c. grated Parmesan cheese
6 tbsp. fresh basil julienne or 1 1/2 tsp. dried basil

Melt butter in heavy 10 inch skillet over medium high heat. Add orzo and saute for 2 minutes. Add stock and bring to a boil. Reduce heat, cover and simmer until orzo is tender and liquid is absorbed, about 20 minutes. Mix in Parmesan and basil.

Well, I would have my pasta with tomato sauce and meatballs or I can have it with vodka. Or those tomato sauce that have different ingredients. Then again, I can have it with cheese or cream, but you can have it your way.

When i prepare orzo, i like to stir fry vegetables 'crisp' such as broccoli florets, carrots strips, red sweet pepper, corn and mushrooms in a small amount of garlic EVOO and add this to prepared drained orzo and drizzle with a bit more EVOO and a sprinkle of parmesan just before serving along with a salad.
i don't have a recipe per se, i just use a halfcup of each veggie per person (before stirfrying). all the flavors melt together and it is a tasty dish.

my fav is spaghetti salad, and I have substituted orzo in it

1lb pasta cooked and drained
12 oz bottle of Italian dressing
1/2 red onion, diced
1/2 yellow onion, diced
1 green, 1red and 1yellow pepper, diced
1 can small black pitted olives
1 small jar of "salad supreme" spice

After rinsing pasta cold, put pasta and all ingredients in a large plastic container with sealable lid. Stir while adding seasoning to mix it throughout.
Put in fridge, turn upside-down every couple of hours [this is why you need a tupperware type container]. I like to marinate over nite.
Serve cold. Add more dressing if it is too dry for your taste, and top with some grated Parmesan cheese.
Some people add pepperoni chunks or slices, cheese cubes, green olives, pineapple chunks, etc.
