Thai food, my friend would make this sauce for thi food I think it had vinigar sugar and dried chillies.....?!

There are different types of sauce but I guess you mean the one that comes with grilled beef or grilled seafood..? If yes.. here's the recipe.
1 teaspoon minced fresh bird chili (can be substituted with crushed red pepper flakes but fresh chili give better aroma)
1 tablespoon rice vinegar
1/2 cup fish sauce (or labeled as nuoc mam available in Asian markets)
1/2 cup fresh lime juice
4-5 cloves garlic minced
1/2 cup sugar
Ingredients:
1/2 cup Rice vinegar
1/4 cup Sugar
2 tablespoons Plum sauce
1 tablespoon Thai fish sauce
1 tablespoon Fresh lime or lemon juice
2 teaspoons Tomato paste
1 teaspoon Minced garlic
1/2 teaspoon Minced serrano chili
1/2 teaspoon Ground red chili paste
1/2 teaspoon Sweet paprika
1/2 teaspoon Salt
1/2 teaspoon All-purpose flour, mixed with
1 tablespoon cold water
Directions:
Combine all ingredients and 1/2 cup water in a small saucepan, and bring to a boil. Reduce heat and simmer for 4 minutes. Let cool. Will keep in refrigerator for 3 days.
Easy ,common Thai sauces are a combination of fish sauce(That putred fermented fish juice ,. avilable at the grocery)sugar , red chili flakes and water or rice wine vineger,sometimes fresh chopped chilis(jalapenos work in a pinch)Try mixing first your vinegar and sugar to find the right balance first , then add your fish sauce ,chili's etc,etc.You can dillute with water(most restaurants do)Good luck
Nuoc Nam......Vietnamese dipping sauce:
1 teaspoon crushed red pepper flakes
1 tablespoon white vinegar
1/2 cup nuoc mam (fish sauce) sold in Asian markets
1/2 cup fresh lime juice
4 cloves garlic minced
1/2 cup sugar
In bowl soak the red pepper flakes in the vinegar for 10-15 minutes.
In second bowl combine fish sauce,lime juice,garlic, and sugar
Stir in 1 1/2 cups boiling water and the pepper/vinegar mixture.
Stir until sugar is dissolved. Allow to cool.
Serve at room temperature.
Store in jar in the refrigerator for up to 30 days.
This is the Vietnamese recipe, but theyt are similar...I serve this with spring roll, egg rolls, etc.
