Please tell me what each of the is for: rice vinegar, peppercorn chili oil, and pure sesame oil?!
Answers: So I bought each of these for one recipe for tonight but the bottles are pretty large (that's all the store had) and so I want to know what can I use each of them for in the future so they won't get wasted. Thanks!

Rice vinegar - sushi rice (add some sugar & salt for sushi vinegar), Chinese sweet & sour sauce, Filipino adobo (uses up vinegar in no time), salad dressings, making pickles

Chilli oil - meat marinades, BBQ sauce & dipping sauces where you want some kick; Szechuan stir-fry dishes eg. Kong Pao chicken, spicy steamboat stock, hot & sour soup, ma po tofu, XO sauce http://forums.about.com/n/pfx/forum.aspx... (you can have less chillies & use chilli oil, leave out Jinhua ham if unavailable; XO sauce is great for stir-frying all kinds of stuff and also in marinades)
Sesame oil - a few drops in Asian soups, end of stir-fries and in marinades makes dishes very fragrant. Usually only a few drops or a dash is needed, except in dishes like Sesame Oil Chicken (a Chinese post-natal confinement dish, but enjoyed by all)

Basically all 3 items are usually used only in small amounts as they're all strong stuff in their own ways and too overpowering if too much is used, except in certain kinds of dishes where they become the lead actor instead of a minor supporting role. If you regularly cook Asian food or like an Asian touch to dishes, you should have no problems using up those 3 items. Have fun!
i would use them for stir-Fry's or basting met on the BBQ most of them have a good shelf life so you could keep them a while
