Chinese dessert?!
Answers: At school, we're having this international cuisine. I'm chinese, so I'll prepare a chinese dish. But the thing is, my family never prepares any delicious chinese desserts. know any easy-and quick chinese desserts that are delicious, and how many of them would serve 33 kids who just wants a piece of it for sampling taste. Also, one that can be made in about an hour, doesn't include much ingrediants that are hard to find, include too much work with the stove, and can be made by a 13 year old??

Try making some tapioca pudding with tapioca, coconut milk and rock sugar. All can be found in an Asian supermarket.
Below is a cheat recipe:
1. Place some tapioca in a pan with some water, not too much and cook as per packet instructions.
2. When cooked, add some coconut milk and rock sugar to taste.
It should be like a thin (chinese style) soup, with tapioca floating in it, relatively sweet and coconutty - some would describe the texture and look of frog spawn. Enjoy!
Lychee with almond jelly
Flan, or red bean soup.
1/3-1/2 cup sugar
1 cup red beans (soaked in cold water overnight)
1/3 cup lotus seeds (at asian grocery stores or health food stores, soaked in cold water overnight)
1 tablespoon vanilla
1/4 cup pearl tapioca (optional)
1/4 cup rice balls (can be found at asian grocery stores) (optional)
7 cups water
Directions
1Combine water and beans in a large pot, bring to a boil.
2Reduce heat to simmer, cook uncovered till beans are tender (about 2 hours?).
3Add lotus seed and sugar (plus tapioca and rice balls if you choose to), cook until soup thickens a little and lotus seeds are tender, but not mushy (20 minutes).
4Add vanilla, serve hot for a perfect winter dessert, or you can let the soup cool down, then add ice.
5With this basic recipe, you can take out all the beans, increase the amount of lotus seeds and have a lotus seeds sweet soup instead.

Try this....
Red beans in syrup, discard the syrup.
Cooked lotus seeds.
Clear syrup made from 1 cup water and 1 cup sugar.
Sweet condensed milk.
Shaved ice.
Put red beans, lotus seeds and a little syrup in a cup. Top with shaved ice and drizzle with sweet condensed milk.
You can but read beans in can. Cooked lotus seeds are available at any Asian grocery.
One place I go gives fresh orange slices for dessert, and also have homemade almond cookies for sale. I've also seen fresh pineapple served, and those red bean steamed cakes, but I think those are hard to make. I mean, for the most part, they don't eat dessert in China, right? I think it's okay to NOT have dessert if it's not common in China. Just explain why.
It's not true that the Chinese do not eat desserts or sweet stuff, just that you usually only want fresh fruits or a really light dessert after a 8 or 10 course Chinese meal! Also, many Chinese 'dessert' items are actually eaten as snacks during the day or for supper at night.
Many Chinese snacks & sweet stuff are complicated (forget about mooncakes). Like you mentioned, you need something that's quick to do, good to eat, simple to make and wanted by kids. Below are some suggestions:
A) Almond Jelly (very common in Chinese restaurants)
1 liter (4 cups) water
3 teaspoon (tsp) agar agar powder
1/2 cup sugar
1 teaspoon almond essence
1 tin canned lychees or longans, chilled
- Put the water into a saucepan and sprinkle with the agar agar powder. Bring gently to the boil, stirring well, then add sugar & almond essence. Simmer for a few more mins, make sure the agar agar powder is completely dissolved.
- Remove from stove, let it cool a short while, then pour into a large bowl or tupperware container to set. Put it into the fridge to cool faster.
- Cut into chunks and serve with canned longans or lychees. You can also use canned black grass jelly or ice jelly.
- Notes: You can prepare this the night before. If you like a milky jelly, substitute the 1 liter water for half water & half milk. I think this recipe could serve 8, you can multiply the ingredients by 4 (but only increase the almond essence by 1/2 tsp or no change as many people dislike a strong almond taste, maybe go easy on the sugar too).
B) Easy Mango Pudding (this is not a traditional Chinese dessert but still very common & popular in restaurants & in Hong Kong)
250 ml pure mango juice
2 tablespoon sugar
185 ml evaporated milk
1 1/2 tablespoon gelatin powder
1 egg white, whisked till stiff
5 tablespoon hot water
- Dissolve gelatin powder & sugar in hot water. Add mango juice & evaporated milk and mix well. Leave to cool.
- When the jelly mixture begins to set (starting to get firmer), fold in the whisked egg white gently with a large spoon. If you find problems with this, get an adult to help or just leave out the egg white.
- Pour the mixture into a large jelly mould or bowl and refrigerate for at least 15 mins. You can serve with extra evaporated milk poured on top.
- Notes: This serves 5, so you can multiply by 5 or 6 (usually make less than the number of people, to prevent waste). If you want more mango flavor, get 1 ripe mango, blend the flesh in the blender to make mango puree and add this to the mixture. You can also make this dessert the night before.
C) Red Bean Cream
285g (10 oz) small dried red beans (also known as adzuki or azuki beans by the Japanese, don't confuse this with the red kidney beans)
1/2 piece dried mandarin orange peel
6 screwpine or pandan leaves, tied into a knot
250g (9 oz) sugar
1.5 liters (3 pints) water
1 can of coconut milk
- Boil read beans with orange peel & pandan leaves in the water till beans are soft. If you can't find dried orange peel & pandan leaves, leave it out though it makes the dessert nicer.
- Leave to cool for 15 mins, then remove the peel & leaves. Pour into a blender and blend the red beans till smooth.
- Heat the blended beans in a saucepan, adding the sugar. When it boils, lower the heat and simmer for 10 mins.
- Serve warm, with some coconut milk poured on top. The coconut milk can also be added to individual serving bowls according to taste.
- Notes: I think this recipe can serve all the kids.
You can also try preparing dessert for your family to enjoy. Have fun!
