Beggar's Chicken. Not only does it taste good, the stories and legends surrounding the recipe are so romantic.

In the old days, monks went around China with nothing but the clothes on their back and a bowl for alms, which were given in the form of food. They depended on kind hearts to survive, as they went about their holy ways.

One day, one of these holy men realized that he was headed for an unpopulated part of the country. Before him was a good 3-day walk with no farm or home in sight. All he had was some leftover rice, a piece of dried sausage, and a small pocket knife.

A fat hen came by, and he grabbed it. The only thing he could do was remove the hen's insides, reserving the liver. He chopped the sausage, mixed it with the leftover rice and wild mushrooms growing on tree trunks. He waded into a lily pond and took lotus leaves and gathered lotus seeds. The seeds went into the hen's cavity with the rice, sausage and mushrooms.

He scooped mud from the bottom of the pond and coated the chicken, feathers and all, with a thick layer. He sealed and held togather the mud-packed hen with layers of lotus leaves.

He built a fire and laid the packed hen in the center, covering it completely with of the embers.

The holy man said his prayers for two hours. As dusk fell, an irresistible aroma wafted in the air. It was coming from the fire, where the hen was now fully cooked inside a solid ball of clay.

He took a rock, broke open the clay ball, and there it was: his hen, oozing with juice and flavored with the sausage, lotus seeds and mushrooms. The feathers all clung to the mud, leaving behind only the clean, cooked, juicy hen and stuffing.

p.s.
When I cook this at home, I use a sourdough bread instead of mud, and I end up with a Peasant's Loaf encasing a whole stuffed chicken. We use the bread to sop up all the juices!

I love chicken dumpling soup

I actually like Vietnamese food better....beef noodle soup would be pho........spring rolls, all of it rocks!

Fried Rice with Prawns, Pork etc

cream cheese wontons and dry sauteed green beans

Honey Walnut Shrimp
“Hong Kong Style Chinese recipe! Crispy battered shrimp tossed in creamy sauce topped with sugar coated walnuts”

I like all of it at the Buffet but I especially like the egg rolls

peking duck with plum sauce.

All kinds of Dim Sum.

I enjoy Moo Shu Pork (or chicken)

they come with soft taco shells and yo make Chinese Food Tacos with a sweet and tasty dipping sauce

I love the addition of Egg make it taste even better

I love beef mooshoo (did I spell that right?) ,crab ragoon, and a really fresh stir fry with lots of vegetables!

all the above plus pot stickers, Shichuan spicy dishes, dim sum, beef pan fried fun. and I like stinky tofu too, both fried and stew type, but that is very personal.
Gosh there's just too many...

General Tso's Chicken.

Those Are The Best, In No Order. :]

I can't think of any chinese food that I have tried that I don't like. I love shrimp w/ mixed veggies. My local chinese restaurant makes the best sesame sauce and I love anything with that. Lo main noodles are great too. Love it all!!!
