Nigerian Peanut Soup Recipe
I love peanut-anything. This is a delicious, nutty soup.

3 cups beef broth
1 cup roasted peanuts, ground fine
2-3 small dried hot red chili peppers or 1/2 teaspoon dried red pepper flakes
1 small green bell pepper, minced
1 small onion, minced

Heat the broth to a bare simmer and, in a small bowl, stir together the peanuts and ? cup of the broth until the mixture forms a paste.
Stir paste into the simmering broth, add chili peppers, bell pepper and onion, and bring to a boil.
Simmer, stirring occasionally, for 15-20 minutes, or until the soup thickens to desired consistency, and season to taste.

Jollof Chicken and Rice Recipe
This originated in French colonial Africa. I found this in a cookbook under NIGERIA. It's very similar to jambalaya.

3 lbs chicken pieces
2 tablespoons oil
1 medium onion, chopped
16 ounces canned tomatoes, cut up
1 1/4 cups chicken broth
1 bay leaf
1/2 teaspoon ground ginger
1/2 teaspoon cinnamon
1/2 teaspoon thyme, crushed
1/2 teaspoon salt
1/4 teaspoon ground red pepper
1 cup long grain rice
1 tablespoon parsley, chopped

In a large skillet brown chicken on both sides in hot oil aobut 15 minutes; remove from skillet. Set aside chicken, reserving drippings.
Add the onion to drippings; cook till tender but not brown. Drain off fat.
Return chicken to skillet.
Combine undrained tomatoes, broth, and seasonings. Pour over chicken. DO NOT STIR.
Bring to boiling; reduct heat.
Cover; simmer for 30 minutes.
Skim off fat.
Add rice, making sure all the rice is covered with liquid.
Cover; simmer for 30 minutes more or until rice is tender.
Remove bay leaf. Sprinkle with parsley.

Mango and Banana Sundae Recipe
Great looking sundae from Nigeria. Adapted from The African Cookbook by Ben Sandler.

1 mango, peeled and finely chopped
2 bananas, peeled and sliced
2 tablespoons lemon juice
4 tablespoons orange juice
vanilla ice cream
cinnamon (optional)
brown sugar (optional)
peanuts (optional)

Place mango and banana pieces in a large bowl. Add lemon and orange juice. Toss lightly.
Scoop ice cream into a sundae dish and cover with the mixed fruit. Sprinkle with cinnamon and brown sugar, if desired, or nuts.
